The tourism sector, which encompasses various activities such as those of Tourism, Hospitality and Leisure, has become notorious in recent years demonstrating representativeness in the world economy. Based on the importance of this economic sector, the need for professional qualification to understand the Tourism, Hospitality and Leisure market is understood. This research sought to analyze the students' perception of the quality of service in courses in the areas of Tourism, Hospitality and Leisure. As for the approach, this research is classified as quantitative, using the Servqual scale as a research instrument, applied to 209 students from nine courses in the areas of Tourism, Hospitality and Leisure at the Federal Institute of Santa Catarina. For data analysis, descriptive statistics and regression analysis were used. In addition, the gap calculation was performed, identifying gaps found in the quality of the service. As a result, the survey revealed that the greatest expectation of students is related to the dimensions of Safety and Promptness. It was also found that in all courses surveyed, the tangibility dimension had gaps. The data indicate that the characteristics of the respondents are more related to the perceived quality than to the students' expectations. Thus, evidence indicates the existence of a statistically significant relationship between perception of quality and characteristics such as age, not knowing / not having intention and taking another course and intention to start a company.
