Improving the Appeal of Institutional Foodservice as a Potential Employer

Abstract

As institutional foodservice is faced with many challenges in the future, it needs qualified and motivated managers to deal with those challenges. Yet, among hospitality management students institutional foodservice is not often considered a viable career option. This article describes a three-step approach that was used to bring hospitality management students and institutional foodservice providers closer together. Several related projects gave students a chance to see institutional foodservice management from the inside, and enhance their appreciation for and interest in college and university foodservice management careers. At the same time, the projects made the foodservice provider realize that hospitality management programs are a relatively untapped source of well-qualified future management.
